  • 24 Big Clams
  • 4 Tomatoes (finely chopped)
  • 1 Onion (finely chopped)
  • 4 Serrano Chiles (finely chopped)
  • 1 Cup Cilantro (finely chopped)
  • Jack Cheese (shredded)
  • Mayonnaise
  • Butter (I really prefer to use the brand CHALLENGE BUTTER the one with the deer on it).
  • Salt & Pepper
  • Beer (any kind except dark)
  • Lemon (the yellow kind) (Round thin slices cut in half)
  • Foil Paper (cut in big enough squares to wrap the clams in it)
  • Special Side Sauce:
  • 4 Serrano Chiles (Round thin slices)
  • 3 Limes (squeezed)
  • Soy Sauce

Directions
  1. Preparing the Shells:
  2. You will need to open up the uncooked shells carefully without breaking the shell or separating them make sure they stay attached, and now you will remove the meet from the shell and repeat until you’ve done all of them.
  3. You will wash the shells and set aside for later.
  4. Know you will wash & clean the clam meet, make sure to remove the dirt and the “pupu” (haha)
  5. Now get ready to start having some CHOP CHOP fun time:
  6. Chop the clam meet and put in a bowl and set aside.
  7. Now you will chop the tomatoes, onion, Serrano chiles, and the cilantro put all in a bowl add salt and pepper to taste and mix.
  8. Set aside in a bowl shreded Monterry Jack cheese.
  9. Preparing the Shells:
  10. In the shell you will put the clam meet add a slice of lemon on top, 1 T-spoon of vegetables (or more if desire), ½ t-spoon of beer, ½ t-spoon spoon butter, ½ t-spoon mayo and cheese to taste.
  11. Close tight and wrapped tightly with foil paper.
  12. You can either bake them in the oven at 325 degree for 25 minutes or grill them for 12 minutes on each side. Which ever you choose they will still be delightful.
  13. Special Sauce:
  14. In a little bowl put the Serrano add the lime and let it marinate for 5 minutes then add the soy sauce.
  15. This dish goes great with a side of steam white rice.
  16. Serving:
  17. You will un-wrap the clams as you eat them add special sauce to your clam and they will be so goooooooood.
  18. What I do is I put the inside of my clams on top of the white steam rice and I add the special sauce and it taste great.
