How to make it

  • Preheat oven to 350F
  • Put some butter or oil in a pan over medium heat and add onions.
  • Sprinkle a couple pinches of salt and sweat the onions until they are translucent
  • Add ketchup, bbq sauce, worcestershire sauce, spicy brown mustard, dijon mustard, yellow mustard, hot sauce, stead sauce, and chili sauce
  • Stir ingredients together and allow to reduce over medium heat for several minutes (the longer it sits the more concentrated the flavor)
  • Once the sauces have concentrated remove the mixture to a cool bowl
  • Mix egg, bread crumbs and ground beef with fingers, just until the egg is evenly distributed
  • Add sauce and onion mixture to meat and mix until evenly distributed
  • Form the meat into a loaf
  • On a baking sheet lay out enough bacon to make a base for your loaf
  • Put the loaf on top of the bacon and then wrap the slices up around
  • Wrap remaining bacon over the top of the loaf
  • Bake for 50 minutes

    I do put bacon on bottom of a lot of things. It seems to be so much better. Fantastic recipe!

    This sounds so good - I always use bacon on my meatloaf, but have never tried putting it on the bottom and the top.
