Crock Pot Chipotle Beef Recipe
While the beef is cooking you can also add potatoes, onions and carrots to create a full meal (add 1/2 to 1 cup stock to the crockpot to cook the vegetables.)

Ingredients
  • 1/4 cup olive oil
  • 3 lbs. beef stew meat
  • salt and pepper to taste
  • 1 16 oz. jar roasted chipotle salsa
  • hot, cooked rice (optional)

Directions
  1. Heat the oil in a large skillet over medium high heat.
  2. Brown the beef in the skillet in batches being careful not to overcrowd (add more oil if necessary). Salt and pepper the beef as it cooks.
  3. Transfer the beef to the crock pot with a slotted spoon.
  4. Pour the chipotle salsa over the beef and cook in the crockpot 4 to 5 hours on high heat. The beef is done when the cubes pull apart easily.
  5. Serve beef over rice or shred and use for tacos, burritos, enchiladas or sandwiches.
