rosemary roasted sweet potatoes and onions

- 2 large, unpeeled sweet potatoes ( about 1 1/4 pound) shopping list
- 2 tablespoons canola oil shopping list
- 1 teaspoon rosemary (fresh is good) shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon paprika, preferably smoked shopping list
- 1/8 teaspoon ground red pepper or red pepper flakes ( optional ) shopping list
- 1 medium sweet or yellow onion, cut into chunks shopping list
How to make it
- Preheat oven to 425'.
- Coat 10 X 15 pan with non stick cooking spray.
- Cut sweet potatoes into 1 inch chunks.
- Place in large bowl and add oil. Toss well. Add rosemary, salt, paprika and pepper, if desired. Toss well. Add onion. Toss again.
- Spread vegetables in single layer on prepared pan.
- Bake 20-25 minutes or until very tender, stir after 10 minutes.
- let stand 5 minutes before serving.

I make mine the same way,the onion will caramelize and the smoked paprika adds just enough heat to stimulate your taste buds.
