How to make it

  • Preheat oven to 425'.
  • Coat 10 X 15 pan with non stick cooking spray.
  • Cut sweet potatoes into 1 inch chunks.
  • Place in large bowl and add oil. Toss well. Add rosemary, salt, paprika and pepper, if desired. Toss well. Add onion. Toss again.
  • Spread vegetables in single layer on prepared pan.
  • Bake 20-25 minutes or until very tender, stir after 10 minutes.
  • let stand 5 minutes before serving.

    I make mine the same way,the onion will caramelize and the smoked paprika adds just enough heat to stimulate your taste buds.

    I love sweet potatoes and am always looking for new ways to prepare them. The way you've seasoned this sounds delicious. I've never had smoked paprika before and can't wait to find some to try with this.
