This is like one of my favorite salads. I make mine with Olive oil and vinegar and a pinch of salt sometimes oregano.
In the heat of summer I add ice cubes, believe it or not, as they melt I soak the juice up with a crusty Italian bread.

We used to make this when I was catering. We were on budget so we used a lot more cukes than tomato's-but it is delish. Thanks.

This sounds delicious. It makes a big difference if the tomatoes are fresh, so make sure, if you want a tasty salad to use fresh tomatoes
