Light And Fluffy Pancakes Recipe

Ingredients

1-3/4 cups white flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 1/2 cups buttermilk

3 eggs, lightly beaten

2 tbsp vegetable oil

1 tbsp honey or 3 tbsp white sugar(your choice)

Orange Honey Butter:

1/2 cup butter, softened

1/3 cup honey

2 tbsp orange juice, concentrate

Directions

In a mixing bowl combine flour, baking powder, baking soda and salt.

Combine buttermilk, eggs, oil and sugar(or honey);add to dry ingredients and mix well.

Pour batter by 1/4 cup fuls onto lightly greased hot griddle; turn when bubbles form on top of pancakes.

Serve with butter and maple syrup or try this......

For Orange Honey Butter:

Combine butter and honey in a medium bowl; beat well.

Stir in orange juice concentrate until smooth. Serve with pancakes.

Oh man, if I could rate these a "10", I would! For anyone looking for a good old fashioned fluffy, tender, soft pancake, this is it. It's the kind of pancake my husband has been hoping I'd make for the 40 years we've been married!! I've made every OTHER kind of pancake, but this it THE go-to pancake from now on when we want to remember those days of growing up and our moms serving us warm fluffy pancakes.
