How to make it

  • Saute the onion/garlic and oregano in a hot pan with the olive oil till translucent /browning
  • Keeping the heat high, throw in the red wine and reduce for a few mins
  • Add the tomatoes, puree and sugar, balsamic vinegar and turn down the heat-stir
  • Prepare your crispy bacon and pitted and rinsed olives and add
  • Do not let the tomatoes stew as this will make it watery -turn off the heat when hot enough to serve.
  • Salt and pepper to taste. Do not oversalt -remember the bacon!!!!- taste all the time.
  • Add basil just before serving and add sauce to your pasta with some freshly cracked black pepper and freshly grated parmigiana.
