Ingredients

How to make it

  • peel apples, leaving the stem intact (looks prettier)
  • but removing the 'dried apple blossom')
  • stir together whitte wine, the marrow of the vanilla bean, sugar, lemon juice and grated rind
  • bring to boil
  • reduce heat
  • put in apples, let simmer at low heat approx. 20 minutes or until apples are not quite done - they should NOT lose their shape or get wrinkles :-)
  • let cool in liquid
  • remove apples
  • reduce liquid until about 1/3 is left
  • stir in apricot jam until it is dissolved
  • take one apple at a time, turning, brushing with this liquid until they are all evenly coated. repeat, until they are 'crusted' all over
  • now, beat the whipping cream -'perfuming' it with the Calvados and about 2 TBSP of apricot jam - until just fluffy - do not overbeat!
  • put cream on nice serving dish, place apples onto cream. i decorate this with fresh mint leaves
