Mandarin Orange Cake Recipe
This cake tastes better if made the day before and kept in the refrigerator.

Ingredients
  • Cake
  • 1 box yellow cake mix
  • 1-11 oz. can mandarin oranges(undrained)
  • 1/2 Cup oil
  • 4 eggs
  • Topping
  • 1 20 oz can crushed pineapple(undrained)
  • 1- 4 oz. pkg instant vanilla pudding
  • 1-10 oz. container whipped topping
  • 1 can mandarin oranges - drained

Directions
  1. Preheat oven to 350 degrees F.
  2. Grease & flour long 10x15 inch pan or 3-8" layers
  3. Puree oranges & juice in blender.
  4. Mix cake mix oranges, oil and eggs.
  5. Beat 3 minutes
  6. Bake for 25-30 minutes
  7. Topping
  8. Mix the pineapple & pudding. Fold in whipped topping. Decorate with the remaining mandarin orange slices.
  9. Refrigerate the cake. Taste is better the next day.
