Ingredients

How to make it

  • Preheat oven to 400
  • Saute mushrooms and shallots in butter until tender and liquid they give off is evaporated, about 10 minutes or so
  • Add salt and pepper
  • Remove from heat and stir in creme fraiche and tarragon
  • Set aside
  • Lightly oil all cups of a 12 cup muffin tin
  • Fit a slice of ham into each cup (Ends will stick up and hang over edges of cup)
  • Divide mushroom mixture between all cups
  • Crack an egg into each cup
  • Bake for about 15 minutes or until whites of egg are completely cooked and edges of ham are browned and crispy
  • Season with salt and pepper

    These sound good, and a fun novelty for kids to help prepare.
    I presume the ham edges sticking out are kind of important for tugging the dish out of the muffing cup? :^)
