My best friend Melanie is a great cook and made this for me one night. Here is her recipe. That is not us in the photo to the left by the way, I just liked the picture of these chicks catching giant catfish...

Ingredients
  • 2 Tbsp Brown Sugar
  • 1 Tbsp sesame oil
  • 2 cloves garlic, minced
  • 1/2 c boiling water
  • 3 Tbsp Nuoc Mam (Fish Sauce)
  • 1 lb catfish filets, cut in thirds
  • 2 scallions , chopped
  • 4 sprigs coriander (cilantro)
  • 1/2 tsp. black pepper
  • 1 thai chili, finely chopped
  • fresh ginger to taste

Directions
  1. Heat sugar in pot with enough water to wet it. Heat over medium for 3-5 minutes. Stir once. Add garlic, ginger, oil and chili. Stir for 1 minute.
  2. Add boiling water, fish sauce, and catfish. Turn pieces so they're evenly coated. Reduce to simmer, cover, and cook 5 minutes.
  3. Uncover, cook 2-3 minutes. Remove from heat.
  4. Garnish with black pepper, scallions and coriander (cilantro).
  5. Serve with rice and steamed cabbage... adding a little vietnamese hot sauce, Sriracha, is a must for people who want it spicy and authentic.

Wow, if I liked ginger, I'd be all up on this like white on rice. I can't seem to cook catfish for my life. This sounds different, in fact, it fueled me to look up what nuoc mam is and I found this for you, in case you wanted to make your own.
