Ingredients

1/2 stick melted margarine

1 box Jiffy corn muffin mix(8 1/2 oz.)

1 large chopped onion

1 -6 oz. container low fat cottage cheese

4 eggs - well beaten

1 teaspoon salt(optional)

1 box (10 oz.) chopped frozen broccoli

Directions

Preheat oven to 400 degrees F.

Spray loaf pan with nonstick spray.

Mix all ingredients together, except corn muffin mix; add this last. Bake at 400 degrees for 30 minutes or until brown.
