I love middle eastern food and I could make a meal out of tabouli on a hot summer day - guess Im wishing or dreaming since its really cold here today

Ingredients
  • 1 cup fine bulgur wheat
  • 3 bunches italian parsley
  • 3 medium tomatoes
  • 1 large bunch scallions
  • 2 lemons juiced
  • 2 Tbsps garlic minced
  • 1/2 cup olive oil or to taste
  • salt and pepper(black) to taste
  • garden mint (quarter bunch)

Directions
  1. Rinse bulgur with cold water and discard water. Add half of the lemon juice to bulgu. Finely chop parsley leaves and mint. Chop scallions and tomatoes into small pieces. Add garlic
  2. Mix all ingredients and let sit for an hour in refregarator.
  3. Serve with crisp romaine lettuce leaves

I don't think that I have ever tasted anything that sounds like this so I will try for sure. I like to try different things.

I love Tabouli and Lord knows I have plenty of garden mint, having made the big mistake of not planting it in a pot!
