Mamita Chulas Italian Soup

- 2 tblspns olive oil shopping list
- 1 clove garlic shopping list
- dash red pepper flakes shopping list
- 1 can chopped tomatoes (with juice) shopping list
- 1 can chicken stock (or vegetable stock) shopping list
- 1 small head of broccoli* shopping list
- 1 can cannellini beans** shopping list
- 1/2 lb of italian sausage shopping list
- 1/4 cup red wine (optional) shopping list
- small pasta (elbow, farfalle, shells, etc.) shopping list
- salt and pepper to taste shopping list
- pecorino romano or parmesan cheese shopping list
- *if you don't like broccoli, you can easily substitute spinach or escarole or some other green leafy veggie if you like shopping list
- **Great White Northern beans can be substituted for cannelini beans shopping list
How to make it
- Heat olive oil in large saucepan.
- Once oil is hot brown garlic and red pepper in olive oil
- Add sausage and brown.
- Add chicken stock, tomatoes and juice and red wine bring to a boil and lower heat. Simmer about 15 - 20 minutes
- Bring a small pot of salted water to a boil. Add pasta and cook until al dente.
- At the same time that you put the pasta in the boiling water, add broccoli and beans and heat through or until broccoli is tender. Add salt and pepper to taste.
- Put pasta in individual bowls and spoon the soup over top. Sprinkle with cheese if desired. Serve with warm crusty bread.
