Ingredients
  • 4, 8 oz Ahi Tuna Fillets
  • 8 oz Orange Juice
  • 4 t ground Cumin
  • 1 t Salt
  • 1 t Cracked Pepper
  • 4 Avocado
  • 4 Mango
  • 8 oz Vidalia Onion
  • 8 T Chopped Cilantro
  • 12 oz Lime Juice
  • 1 t Salt

Directions
  1. Marinate Ahi Fillets in the 8oz of orange juice and 4 oz. Lime juice for 1/2 an hour.
  2. Remove Ahi from the marinade, season with the cumin, salt and pepper, and place on pre-heated grill.
  3. Dice the avocado, mango and onion and mix in a medium bowl along with the chopped cilantro, 8oz. lime juice and salt. Allow ingredients to "marry" at least 5 minutes.
  4. Once the Ahi filets reach the safe temperature and desired doneness, remove them from the grill place them over a bed of coconut rice or a fresh salad and top with the Avocado Mango Salsa.
