  • 1lb.uncooked farfalle
  • 1Tbs butter
  • 12oz.presliced exotic mushroom blend(can use all cremini mushrooms)
  • 1/2c chopped onion
  • 1/3c finely chopped shallots
  • 1Tbs. minced garlic
  • 11/2tsp. salt,divided
  • 1/4tsp fresh ground pepper
  • 1/4c dry white wine
  • 2/3c whipping cream
  • 1/2c(2oz.)grated fresh parmigiano-reggiano cheese
  • 2Tbs.chopped fresh parsley
  • Minced fresh parsley

Directions
  1. Cook pasta according to directions,omitting salt and fat;drain
  2. Melt butter in lg. non-stick skillet over med-high heat. Add mushrooms,1/2c onion,shallots,garlic,1tsp.salt,and black pepper;cook 12 mins. or till liquid evaporates and mushrooms are tender;stirring occasionally. Add the wine,cook 2 mins or till liquid evaporates,stirring occasionally. Remove from heat
  3. Add pasta,cream,cheese and 2Tbs. parsley,toss to coat. Stir in remaining 1/2tsp salt. Garnish with parsley,if desired. Serve immediately.
