Strawberry Bread Recipe

Ingredients

Flour - 3 cups

Baking Soda - 1 teaspoon

Salt - 1 teaspoon

Cinnamon - 1- 2 Tablespoons (I use 2)

Sugar - 1 1/2 cups

Oil - 1 1/4 cups

Strawberries (fresh or frozen) - 2 cups, smashed - if using frozen, drain before measuring

Eggs - 3 large

Directions

Preheat oven to 350 degrees.

Mix dry ingredients together. Mix wet ingredients together.

Mix all ingredients together, stirring for approximately 40 strokes.

Place in 2 well-greased loaf pans. I use 9x5 pans and divide batter. You could use 1 pan to make a big, generous-sized loaf w/leftover as strawberry muffins too!

Bake 60 - 70 minutes. Start checking at 55 min - Don't over bake!

9 X 4 1/2 inch loaf pan and a 6 X 3 inch loaf pan...I sprinkled a little powdered sugar on top but I wonder if some kind of "drizzle" on top would be good....do you have any Stawberry "sauce" or something simular you might use? What size loaf pan or pans do you yield from your recipe? Really delicious!!!!

Well, I bought my strawberries & made this bread today. Don't anyone pass this one by cause the results were incredible. Best strawberry bread recipe I have ever tried, although I did not use quite so much cinnamon as the recipe calls for, only about 2 tsps. It will definately be made often in my house.
