Blackberry Jam Cake With Buttermilk Icing

- 1 1/4 Cups all purpose flour shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon cinnamon shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/4 teaspoon ground cloves shopping list
- 1 Cup white granulated sugar shopping list
- 1 Cup oil shopping list
- 3 eggs, beaten shopping list
- 1/4 Cup buttermilk shopping list
- 1 teaspoon vanilla shopping list
- 1 Cup blackberry jam(seedless) shopping list
- 1 Cup finely chopped pecans shopping list
- Icing: shopping list
- 3 Cups white granulated sugar shopping list
- 1 Cup butter(no substitutes!) shopping list
- 1 Cup buttermilk shopping list
- 2 Tablespoons white corn syrup shopping list
- 1 teaspoon baking soda shopping list
- 1 Cup nuts shopping list
- 1 teaspoon vanilla shopping list
How to make it
- Preheat oven to 325 degrees F.
- Grease and flour 2-9 inch cake pans. Line with wax paper
- For cake:
- Sift and measure all dry ingredients, except sugar, mix all together, sift 3 times,.
- Add sugar to oil, mix well.
- Add eggs, mix well.
- Add dry ingredients alternately with buttermilk. Stir in vanilla and blackberry jam. Stir in nuts well.
- Pour in cake pans and bake for 30 - 35 minutes.
- Icing:
- In 4-quart pot over medium heat(be sure to use 4-quart pot , this icing will boil over)
- Add all icing ingredients except nuts and vanilla.
- Boil stirring constantly.
- Cook until small amount dropped into cold water forms a ball.
- Pour in large bowl and beat with mixer at high speed for a few minutes. Beat with spoon until it cools; add nuts, vanilla then spread on cake layers.
