Ingredients

How to make it

  • Heat oven to 450
  • Lightly grease a large shallow baking dish with olive oil or spray.
  • Scrub potatoes and cut large ones in half length wise.
  • In a large bowl, combine the potatoes, garlic, olive oil, rosemary, pepper and salt.
  • Place potatoes in shallow baking dish with sliced ones skin side down.
  • Bake for 25 min or until potatoes are tender.

    I made these potatoes today to go with bbq'd atlantic salmon done on cedar planks. I roasted them for 45mins which gave them a nice crispy skin and melt in your mouth centers. Delicious.
    I omitted the rosemary and salt but added some homemade saffron/garlic seasoning. I highly recommend this recipe!
    Recipe modified only because I like rosemary on spring lamb and not on my potatoes. :-)

    I adore fingerlings - we like to do them in foil with garlic and butter, during grilling season! Your recipe sounds delish - will definitely be printed out and used in the near future!!
