These mini potatoes are so flavorful, and if you like garlic and rosemary this is the dish for you! Very easy and the aroma is wonderful.

Ingredients
- 2 Lbs fingerling potatoes
- 5 cloves of garlic, crushed and finely minced
- 3 Tbsp. olive oil
- 1/2 tsp. dried Rosemary (crush a little)
- Coarse salt and freshly ground black pepper to taste
- (I used 1 tsp. salt)
Directions
- Heat oven to 450
- Lightly grease a large shallow baking dish with olive oil or spray.
- Scrub potatoes and cut large ones in half length wise.
- In a large bowl, combine the potatoes, garlic, olive oil, rosemary, pepper and salt.
- Place potatoes in shallow baking dish with sliced ones skin side down.
- Bake for 25 min or until potatoes are tender.

I adore fingerlings - we like to do them in foil with garlic and butter, during grilling season! Your recipe sounds delish - will definitely be printed out and used in the near future!!
