Auntie Theas Spanokopita Recipe
Greek Spinach Pie, made with flake filo dough, spinach, feta cheese, and fresh dill. One of my favorites! This recipe give to me by my very best friend in the world, and Greek Diva.

Ingredients
  • 6 Large Eggs (5+1)
  • 16 oz ricotta cheese (or cottage cheese)
  • 1 1/4 lb feta cheese -- *see Note
  • pepper -- to taste
  • 30 oz spinach -- washed
  • 1 1/2 oz fresh dill -- chopped
  • 1 bunch green onions -- chopped
  • 1 1/2 sticks butter -- melted

Directions
  1. Use a 13x9x3" pyrex baking dish
  2. Need two large bowls (mixing)
  3. Preheat oven 350F.
  4. First bowl: put 5 eggs, cottage cheese, feta, pepper.... Mix all the ingredients. * NOTE -- Use 1 lb Feta and taste mixture. If it's salty enough don't use more feta.
  5. Second large bowl: combine spinach, dill, green onions, and rub this all gently with olive oil not a lot though.
  6. Mix bowls one and two together.
  7. Put four layer of filo on the bottom of pyrex with the butter in between.
  8. Spread 1/2 the mixture in the tray.
  9. Layer with two sheets of filo, buttering each.
  10. Spread last 1/2 of mixture in tray.
  11. Layer the top with 5 sheets filo and the butter in between. For the very last sheet, beat in egg with the remaining melted butter and paint the very top sheet of filo with this to make it golden brown.
  12. Score the tray! Don't score all the way to the bottom but deepish.
  13. Bake 45 minutes or till golden brown on top.

This is a killer recipe and very close to one that a second generation Greek chef gave to me. The fresh spinach and feta with ricotta are classic. His version uses just a touch of white pepper. Dynamite recipe.


Thank you, deedeec, for sharing this recipe - this sounds like the spanokopita I love so much at some of our Greek restaurants in the Chicago area...I can't wait to try this one out on the family next time we are together - I'm sure it is going to be a winner!


Chicago has great Greek food. This recipe has never failed to please. Even my kids will eat it! Getting kids to eat spinach is always a coup.


I'm glad to add this to my collection. It sounds wonderful.
