Ingredients
  • 1 ripe mango, diced
  • 1/2 cup Blueberries (fresh, frozen or canned)
  • 1/4 cup jicama, diced
  • 2 tablespoons red pepper, minced
  • 3 tablespoons red onion, minced
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ginger, minced
  • 1/4 cup rice wine vinegar
  • Fresh cilantro, chopped
  • Salt and pepper to taste

Directions
  1. To prepare the salsa, add all ingredients in a stainless steel bowl and gently combine.
  2. Add salt and pepper to taste, and then refrigerate.
