Andouille Bayou Burgers With Red Pepper Mayo And Fiesta Corn Salsa

- BURGERS: shopping list
- 1/2 lb Andouille sausage shopping list
- 2 1/2 lb ground chuck (15% - 20% lean for burgers) shopping list
- 1/2 small red onion, minced shopping list
- 1 1/2 t salt shopping list
- 1 1/2 t fennel seeds, crushed shopping list
- Couple grinds black pepper shopping list
- Pinch cayenne pepper shopping list
- RED pepper MAYO shopping list
- 1 jar (3-4 oz) roasted red peppers, drained shopping list
- 1/2 c Kraft real mayo shopping list
- 1 T minced shallots shopping list
- FIESTA corn salsa shopping list
- 1 1/2 c cooked corn, drained shopping list
- 1 small red onion, diced shopping list
- 1 jalepeno, seeded and finely diced shopping list
- 1/2 pint grape tomatoes, quartered shopping list
- 1/2 c fresh cilantro, chopped shopping list
- 2 T capers, drained shopping list
- 1 T olive oil shopping list
- 1/2 t salt shopping list
How to make it
- RED PEPPER MAYO (make first and set aside)
- Combine all ingredients in food processor or blender, process until smooth
- BURGERS
- In a large mixing bowl, combine all ingredients and gently shape into 6 patties, approx 1 inch thick
- Lighly oil grill rack, and grill unti desired degree of doneness (4-6 minutes each side for med rare, and so on)
- RESIST ALL URGES TO FLATTEN WITH SPATULA, as this makes for less juicy burgers
- Flip only once
- FIESTA CORN SALSA
- Place all ingredients in medium serving bowl, stir to combine well.
