Ingredients

BURGERS:

1/2 lb Andouille Sausage

2 1/2 lb ground chuck (15% - 20% lean for burgers)

1/2 small red onion, minced

1 1/2 t salt

1 1/2 t fennel seeds, crushed

Couple grinds black pepper

Pinch cayenne pepper

RED PEPPER MAYO

1 jar (3-4 oz) roasted red peppers, drained

1/2 c Kraft real mayo

1 T minced shallots

FIESTA CORN SALSA

1 1/2 c cooked corn, drained

1 small red onion, diced

1 jalepeno, seeded and finely diced

1/2 pint grape tomatoes, quartered

1/2 c fresh cilantro, chopped

2 T capers, drained

1 T olive oil

1/2 t salt

Directions

RED PEPPER MAYO (make first and set aside)

Combine all ingredients in food processor or blender, process until smooth

BURGERS

In a large mixing bowl, combine all ingredients and gently shape into 6 patties, approx 1 inch thick

Lighly oil grill rack, and grill unti desired degree of doneness (4-6 minutes each side for med rare, and so on)

RESIST ALL URGES TO FLATTEN WITH SPATULA, as this makes for less juicy burgers

Flip only once

FIESTA CORN SALSA

Place all ingredients in medium serving bowl, stir to combine well.
