Ingredients
  • 1 lb. jimmy dean sage sausage
  • 1/2 cup green sweet peppers
  • 1/2 cup red sweet peppers
  • 1/4 cup orange sweet peppers
  • 1/4 cup chopped green onions
  • 3 cups square cut home fries( frozen hash browns) thawed.
  • dozen large eggs ( brown fresh if you can find them)
  • 1 cup buttermilk
  • 1/2 cup milk
  • 1 1/2 cups shredded cheese ( monteray jack or pepper jack) any.

Directions
  1. Spray 3 qt. casserole dish with non stick
  2. in frying pan cook sausage until it crumbles and browns "drain."
  3. add peppers and onions cook and mix until peppers are crispy tender.In 3 qt. dish spread potatos evenly
  4. top with skillet sausage mix. salt to taste sprinkle all over. In mixing bowl combine eggs and milks. Whisk together and pour over home fries and sausage mix. Top with cheese, cover bake at 350 for one hour or untill light golden color and eggs have set. serve with wheat toast and preserves.
