Salpicon De Mariscos Recipe
From Miami, Florida's Casa Juancho restaurant, this is a delicious, diverse seafood salad with a ton of flavour.

Ingredients
  • 2 tbsp salt
  • 12 whole black peppercorns
  • 3 bay leaves
  • 8 oz. shrimp, peeled and cleaned
  • 12. oz. bay scallops
  • 8 oz. calamari
  • 10 tbsp white wine vinegar
  • 4 tbsp extra virgin olive oil
  • 2 tsp. dijon mustard
  • 4 oz. lobster meat
  • 1 green bell pepper, julienne
  • 1 red bell pepper, julienne
  • 1 medium onion, diced

Directions
  1. Add salt, black pepper and bay leaves to a pot of water and bring to a boil.
  2. Add seafood (except lobster) and boil for five minutes.
  3. Drain, and let cool completely.
  4. In a separate bowl mix vinegar, olive oil and mustard.
  5. Mix in lobster, green and red peppers, onion and cooled seafood.
  6. Mix well, and chill for 2-3 hours before serving.
