Here I am, doing a public service for those who have read this recipe and don't know what quark is. It's a fresh white cheese, a little tangy, with mid-sized curds in it (usually mid-sized, anyway). There are lots of places to buy it if you're in Hungary or Germany. However, if you're an American, I recommend checking out the site germandeli.com , as they have quark and loads of other interesting German (and some other nationalities') foods and household stuff. They are based out of Houston, and it's cheaper and easier than ordering from Europe... and what a selection! Some towns have a European or specialty grocer where you can find quark, too, but if you haven't got one in your area, this would work. Enjoy making tasty stuff with quark.
