Rocket Pear Cheese Salad

Summertime side dish for all occasions.
Ingredients
- 1 bunch rocket, trimmed - or lettuce of your choice shopping list
- 4 slices prosciutto, fried until crisp, then crumbled shopping list
- 2 pears, cored and sliced shopping list
- 4 oz blue cheese, crumbled - I use gorgonzola shopping list
- 1/2 cup black olives shopping list
- Dressing: shopping list
- 1/4 cup olive oil shopping list
- 1 tblsp red wine vinegar shopping list
- 1 tblsp white wine vinegar shopping list
- 2 tsp Dijon or grain mustard shopping list
- salt and black pepper (freshly ground), to taste shopping list
How to make it
- Arrange rocket, crumbled prosciutto, pear, cheese and olives in a salad bowl.
- To prepare dressing, whisk ingredients together.
- Pour over salad just before serving. Serve with bread for a light lunch or as a meal accompaniment.
