Ingredients
  • 1 bunch rocket, trimmed - or lettuce of your choice
  • 4 slices prosciutto, fried until crisp, then crumbled
  • 2 pears, cored and sliced
  • 4 oz blue cheese, crumbled - I use gorgonzola
  • 1/2 cup black olives
  • Dressing:
  • 1/4 cup olive oil
  • 1 tblsp red wine vinegar
  • 1 tblsp white wine vinegar
  • 2 tsp Dijon or grain mustard
  • salt and black pepper (freshly ground), to taste

Directions
  1. Arrange rocket, crumbled prosciutto, pear, cheese and olives in a salad bowl.
  2. To prepare dressing, whisk ingredients together.
  3. Pour over salad just before serving. Serve with bread for a light lunch or as a meal accompaniment.
