Lobster Darling

Ingredients
- 1½ cups heavy cream shopping list
- 3 each egg yolks, well beaten shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 1/8 teaspoon cayenne pepper shopping list
- 3 cups cooked lobster meat, finely diced shopping list
- 1 Tablespoon butter shopping list
- 2 Tablespoons sherry shopping list
How to make it
- Over hot water, heat cream. Stir in egg yolks and seasonings. Stir until mixture starts to thicken.
- Add lobster, butter and sherry. Cook one minute longer over hot water.
- Serve on toast points or in puff pastry shells. May be served hot or cold.
