How to make it

  • Over hot water, heat cream. Stir in egg yolks and seasonings. Stir until mixture starts to thicken.
  • Add lobster, butter and sherry. Cook one minute longer over hot water.
  • Serve on toast points or in puff pastry shells. May be served hot or cold.
