Ingredients

How to make it

  • Preheat oven to 350. Spray 2 6-cup or 1 12-cup muffin pan with cooking spray or line with paper cups.
  • Combine all ingredients in large mixing bowl and mix together until just combined.
  • Spoon mixture into muffin pan(should be 12 large muffins) and bake in oven for 25 minutes or until toothpick inserted comes out clean.
  • I like to freeze these and then leave one out overnight to thaw for the next days breakfast.

    I've made these a few times now, they are easy to make and taste great! I like to use blueberries instead of raisins, and I add 1/4 cup of hemp powder too.

    Sorry but this is not a high protein snack..only 7g per serving and over 45 g of carbs!!! Not for all workouts...maybe if you want to gain weight or are a runner. Too much sugar as well in the recipe.
    I was looking for a high protein muffin/cookie/cake recipe which uses protein powder or even ground protein tabs.

    I've made these twice....Body builders love these complete meals..Thx! for sharing they are perfect..I always double the recipe and instead of apricots, I used dried Mango this time. I make them in regular muffin tins and about 48 servings, freeze them and am set!

    I'm definitely going to make these. Thanks for posting nutrition information, I calculated that each muffin is 4 points in the weight watchers system, just right for a healthy breakfast.
