Protein Fiber Power Muffins

- 1 cup whole wheat flour shopping list
- 3/4 cup ground flax meal shopping list
- 3/4 cup wheat bran shopping list
- 1/2 cup oats shopping list
- 1/4 cup wheat germ shopping list
- 1/4 cup soy flour shopping list
- 1/2 cup molasses shopping list
- 1/2 cup brown sugar shopping list
- 2 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 2 tsp cinnamon shopping list
- 1 1/2 cups shredded carrots shopping list
- 2 peeled and shredded apples shopping list
- 1/4 cup each raisins and dried julienned apricots(or dried fruit of your choice) shopping list
- 1/4 cup pumpkin seeds (or nuts/seeds of your choice) shopping list
- 3/4 cup milk shopping list
- 2 eggs shopping list
- 1 tsp pure vanilla extract shopping list
How to make it
- Preheat oven to 350. Spray 2 6-cup or 1 12-cup muffin pan with cooking spray or line with paper cups.
- Combine all ingredients in large mixing bowl and mix together until just combined.
- Spoon mixture into muffin pan(should be 12 large muffins) and bake in oven for 25 minutes or until toothpick inserted comes out clean.
- I like to freeze these and then leave one out overnight to thaw for the next days breakfast.
