Jo Jo--no fish sauce? I somehow expected that instead of the birds eye chili. And while we are on the subject, what is birds eye chili? Would you suggest some other pepper?

Any other hot pepper will do, the smaller the hotter, something like a cayenne or even a very tiny piece of habanero will work!
