	lemon basil bean rice and tuna cold summer salad

Ingredients

1 can red kidney beans

1 can canelli beans

1 can good water packed tuna fish

1 1/2 cup or so cooked al dente brown rice, cooled

juice of half a large lemon

2 tbs chopped fresh basil

salt

pepper

Directions

Drain and rinse beans, mix with drained tuna in medium bowl

add cooked rice

in little dish whisk lemon juice, basil, salt, and pepper

drizzle and mix to coat--don't crush the beans!

Sounds yummy! We make a similar salad for barbeques: a can of kidney beans, a can of corn (not creamed or anything), salt, pepper, olive oil and balsamic vinager to taste, chives or herbs if you like. There's no meat in it, but it's sure tasty!
