Ingredients
  • 1 can red kidney beans
  • 1 can canelli beans
  • 1 can good water packed tuna fish
  • 1 1/2 cup or so cooked al dente brown rice, cooled
  • juice of half a large lemon
  • 2 tbs chopped fresh basil
  • salt
  • pepper

Directions
  1. Drain and rinse beans, mix with drained tuna in medium bowl
  2. add cooked rice
  3. in little dish whisk lemon juice, basil, salt, and pepper
  4. drizzle and mix to coat--don't crush the beans!
  5. and you are done my friend.

Sounds yummy! We make a similar salad for barbeques: a can of kidney beans, a can of corn (not creamed or anything), salt, pepper, olive oil and balsamic vinager to taste, chives or herbs if you like. There's no meat in it, but it's sure tasty!

This was so simple yet delicious. I used a couple of cans of 6 bean blend instead of the kidney and navy beans -- it was great. :-)

The simple "dressing" gave the dish a nice, subtle flavour.
