How to make it

  • Preheat your oven to 350F and make sure you have a middle rack. Line your cupcake tin with paper or foil liners.
  • Whisk sugar, flour, salt and baking powder in the bowl of a standing mixer fitted with paddle attachment.
  • Add butter, egg, sour cream, egg yolks, and vanilla. Beat this at medium speed until smooth, (approx. 30 seconds).
  • Pour your batter in your cupcake tin evenly and then bake until light golden brown. The cupcakes are ready when a toothpick poke in the center of the cupcake comes out clean.
  • Let these cool for about 45 minutes.

    i made these for my sister's wedding (for the kids) and they were a PHENOMENAL hit! Wonderful moist soft tangy and sweet and YUMS. i used http://allrecipes.com/recipe/ricks-special-buttercream-frosting/detail.aspx for the icing and it was a great pairing... Fantastic cupcakes.

    I try all cupcake recipes. These disappointed me. All those eggs and sour cream create a heavy cake. I have found, that for some reason,the thinner the batter, the better the cake.This batter was ultra-thick.

    3/28/2010 - Just got done baking these, they're super easy to make and they're delicious. Next time I make them, I think I'll add another cup of sugar, though.

    Ok, so I am happy to see the pictures of these cupcakes. I always thought if mine look correct, and I am guessing they are because they look similar to the ones on the picture (un-iced)... =)
    they look great - I love to substitute a cupcake for breakfast over a blueberry muffin anyday!
