Olive lover's chicken salad. Wonderful heaped on Italian rustic bread with fresh spinach leaves. So simple, and so delicious.

Ingredients
- 3 cups *seasoned* cooked chicken, chopped or shredded in medium size pieces
- 2 cups celery, chopped
- 3/4 cup chopped stuffed green olives
- 1/2 cup mayonnaise
Directions
- In large bowl, combine all ingredients, maybe using a little more mayonnaise
- Refrigerate until serving time
- May add pine nuts, pecans or almonds
