Lemon Crunch

- BOTTOM LAYER shopping list
- 1 1/3 cups soda crackers, finely rolled shopping list
- 3/4 cup margarine, softened shopping list
- 1/2 cup sugar shopping list
- 3/4 cup flour shopping list
- 1/2 cup coconut shopping list
- 1 tsp baking powder shopping list
- FILLING shopping list
- 3 eggs, beaten shopping list
- 1/4 cup lemon juice shopping list
- 1 cup sugar shopping list
- 1/4 cup margarine shopping list
How to make it
- BOTTOM
- Mix all ingredients together and reserve 1 cup for the top. Press into a foil lined and greased 9x9 pan.
- Bake at 350 degrees for 15 minutes.
- FILLING
- Beat eggs in the top of a double boiler or heavy pot.
- Add remaining ingredients and stir and cook until thickened.
- Spread over crumbs in pan and sprinkle reserved crumbs over top.
- Return to oven until browned, about 20 minutes.
- Cool on wire rack.
- Remove from pan lifting with foil and cut into squares.
- Enjoy!
