I love roasted asparagus and this recipe is no exception. The subtle garlic flavor with roasted olives is wonderful. What can be more simple and elegant?

Ingredients
  • 1 1/2 pound asparagus, trimmed (I prefer the pencil thin ones)
  • 1/2 cup kalamata olives, pitted
  • 1 1/2 Tbl. olive oil
  • 2 gloves garlic, minced
  • kosher salt and coarse pepper to taste

Directions
  1. Place asparagus and olives on a baking sheet, drizzle with olive oil.
  2. Sprinkle garlic, salt and pepper over top and toss to lightly coat olives and asparagus.
  3. Roast in a 425 degree preheated oven for 10-12 minutes or until crisp tender.

This sounds great! I've been doing lots of roasted vegitables lately. Had I seen this last night I would have given it a try. Served aspargus but just steamed it and served it with balsamic vinegrette. I've bookmarked it for next time!
