How to make it

  • Preheat oven to 350 deg. Leave a few seeds in chiles for flavor. Spread chiles on paper towels and pat dry. Sliip a strip of jack cheese in each chile and lay them side by side in a greased 9 by 13 baking dish. Sprinkle with Cheddar. Beat eggs, add flour, beating until smooth. Add milk, salt, pepper and pepper sauce and beat thoroughly. Carefully pour egg mixture over chiles. Bake uncovered for 45 min. or until knift inserted in custard comes out clean. Serves 4 or more.

    I've been using this recipe for abut 4-5 years now -- always come out great and tastes very delicious. A few changes I usually go with are adding black beans (usually) and thinly sliced stew beef (occasionally) inside my chiles. My chiles are over-stuffed, so I usually use the largest medium heat ones I can get.

    No, I haven't folded the beaten egg whites in. I have seen other recipes that call for that method, but haven't tried it.

    I am just wishing for this right now. This sounds so good, and reminds me of my wonderful times in New Mexico. I am an artist, and that sky in NM is the most beautiful I have ever seen in my life. Love to paint it. Thanks. :)

    This dish may also be used as a main dish with some frijoles and sliced, fresh tomatoes. That's the way I like it. Also, very, very good with grilled steak. YUM!
