Texas Peanut Patties Recipe

Texas Peanut Patties Recipe
Add Step-by-Step Photos

Growing up I remember travelling from Kansas to Oklahoma with my parents and sister to visit my mother's relatives. I remember buying those red peanut patties when we stopped for gas. They are so good, one at a time! True tooth rotters they are!

Ingredients
  • 2 1/2 cups sugar
  • 2/3 cup light corn syrup
  • 1 cup milk
  • 2 1/2 cups raw peanuts
  • 4 tsp margarine
  • 3-5 drops red food coloring (the patties should be a muted /light red color)
  • 1 cup confectioners sugar

Directions
  1. In a large pan combine the sugar, corn syrup, milk and peanuts.
  2. Cook slowly until the mixture forms a soft ball (you will know when!).
  3. Remove from heat and add the margarine, coloring and confectioners sugar.
  4. Stir until the mixture begins to thicken.
  5. Drop by spoonfuls onto waxed paper or baking paper, or form into discs using a metal circular cookie cutter for a mold. Let the pattie cool before popping it from the mold.
  6. Store in an airtight container or wrap individually with plastic wrap.

OMG, I haven't thought of those things in years. My step-dad loved them (still does, but I think they're too hard on his teeth now). I never liked these things personally, but you gave me a great dose of nostalgia.

I have raw peanuts in the pantry and can't wait to give this a try.
