Ingredients
  • 1/2 teaspoon Worcestershire sauce
  • 1 each egg
  • 1/4 cup mayonnaise
  • 1 teaspoon sour cream
  • 1 teaspoon lemon juice
  • 1 teaspoon dijon mustard
  • 2 teaspoons parsley, chopped
  • 1/4 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon Old Bay Seafood seasoning
  • 1 teaspoon kosher salt
  • 1 cup fine dry breadcrumbs
  • 1/4 cup bread crumbs
  • 2 tablespoons red pepper, diced
  • 1 pound crab meat, drained
  • 2 ounces butter, clarified

Directions
  1. In non metallic bowl, mix together Worcester sauce, egg, mayonnaise, sour cream, lemon juice, dijon mustard, parsley, paprika and cayenne pepper. Old Bay seasoning and salt.
  2. Whisk until smooth.
  3. Using a spatula, gently fold in bread crumbs, diced red pepper and crab meat. Hand form crab cake mixture into patties 2-3 inches in diameter.
  4. Coat each side with fine bread crumbs and place on a cookie sheet or other shallow tray lined with parchment paper. Refrigerate for 2 hours.
  5. Place 2 oz of clarified butter into a saute skillet and heat until it sizzles. Carefully place crab cakes in skillet and cook each side until golden brown. Do not crowd the skillet.
  6. Hold cooked cakes in a 350 degree oven while cooking the rest of the cakes. Serve with Wasabi sauce or cocktail sauce of your choice.

This sounds divine delish--tell me though, is kosher salt, non-iodized salt? Or will it say kosher on it? And I'm not stupid, just mis-understood...hee hee


I made your old bay crab cakes tonight for dinner. It was really great, but I think I started my heat out too much. They fell apart easily. Good news though. My family ate every crumb!!! I loved it too. Thanks!!
