THIS IS MY TAKE ON DORITO CASSEROLE. THE DISH IS A SPIN OFF OF MEXICAN. A FAMILY FAVORITE WHICH I HAVE PREPARED FOR 15 YEARS. YOU CAN ALSO PUT YOUR SPIN ON THIS DISH! YOU WONT BE DISAPPOINTED WITH THIS DISH! ENJOY!

Ingredients
  • 1 REGULAR BAG OF CHEESE DORITOS (CRUSHED IN THE BAG)
  • 4 CHICKEN BREAST OR 4-5 CHICKEN FILETS ( CAN ALSO USE A WHOLE CHICKEN). ALSO YOU CAN BROWN GROUND HAMBURGER CHUCK FOR THIS RECIPE TO USE INSTEAD OF CHICKEN. WE PREFER CHICKEN.
  • 1 BELL PEPPER (DICED)
  • 1 CUP OF GREEN ONIONS (DICED)
  • 1 YELLOW ONION (DICED)
  • SEASONING (I USE NATURES SEASONING)
  • PARSLEY
  • 3 CHICKEN BULLION CUBES
  • 1 CAN OF CREAM OF MUSHROOM SOUP
  • 1 CAN OF CREAM OF CHICKEN SOUP
  • 1 CAN OF ROTEL TOMATOES
  • 1 CAN OF ENCHILDA SAUCE (REGULAR SIZE CAN) CAN USE MILD OR HOT
  • 1-2 CANS OF RANCH STYLE BEANS
  • 1-2 BAGS OF MEXICAN SHREDDED CHEESE OR SHREDDED CHEESE OF YOUR CHOICE
  • JALEPENOS (OPTIONAL)

Directions
  1. BOIL CHICKEN WITH ALL THE VEGETABLES, SEASONINGS, PARSLEY AND BULLION CUBES UNTIL DONE. SAVE BROTH
  2. IN A DIFFERENT BOILER, MIX THE SOUPS, BEANS, ROTEL TOMATOES AND ENCHILDA SAUCE. REMOVE VEGETABLES FROM BROTH AND PLACE IN THIS MIXTURE ALSO. HEAT AND MAKE SURE ALL INGREDIENTS ARE MIXED WELL.IF MIXTURE IS TOO THICK ADD SMALL OF AMOUNTS OF BROTH.
  3. PLACE YOUR CRUSHED DORITO CHIPS IN THE BOTTOM OF A DEEP CASSEROLE DISH, AFTER YOU HAVE SPRAYED THE DISH WITH PAM.
  4. CUT CHICKEN INTO BITE SIZE PIECES AND PLACE ON TOP OF DORITOS. IF YOU ARE USING GROUND HAMBURGER CHUCK, SPREAD EVENLY OVER CHIPS
  5. COVER DORITOS AND CHICKEN WITH MIXTURE
  6. TOP WITH SHREDDED CHEESE AND JALEPENO'S (OPTIONAL)
  7. BAKE AT 375 FOR 30 MINUTES OR UNTIL CHEESE HAS MELTED AND SIDE ARE BUBBLY.
  8. YOU CAN TOP THIS WITH GREEN ONIONS , JALEPENOS AND SOUR CREAM IF YOU LIKE.
  9. ALSO, LESS FAT, LESS SODIUM, OR LIGHT CAN BE USED WITH YOUR CAN GOODS, SOUR CREAM AND CHEESE

Had this for dinner tonight used ground beef, beef boulion granules 2 cans mushroom soup and garnished with chopped tomato, green onion, jalapeno and sour cream. it was great. thanks

Hi there! Wanted to let you know that I think this recipe is awesome!!! I made it for dinner lastnight and it was sooooo yummy!!!! I only made a few minor changes due to limited pantry items. I used half fritos/half doritos for the base, black beans instead of ranch beans and I added some fresh cilantro along with dried parsley. I don't know what Natures Seasoning is so I just used little salt, moderate pepper and generous amount of cumin which I love. Thanks for sharing this great recipe with us!! I will be checking out your other recipes too!!! Happy Cooking!!

I TO AM FROM LA. NEW ORLEANS AREA. I WAS BORN IN LAKE CHARLES, BUT GREW UP AND STILL LIVE ON THE WESTBANK. I CAN'T WAIT TO TRY SOME OF YOUR RECIPES. THIS RECIPE WILL BE MY FIRST TO TRY. IT SOUNDS SO GOOD AND EASY. I AM TRYING TO PUT TOGETHER A COUPLE OF CASSEROLES THAT CAN BE PREPARED AND FROZEN TO WHERE ALL MY DAUGHTER AND HUBBY HAVE TO DO IS TAKE IT OUT AND THROW IT IN THE OVEN TO COOK. I AM HAVING MAJOR BACKSURGERY IN TWO WEEKS TIME AND I WON'T BE ABLE TO COOK OR DO ANY ESSSENTIAL THINGS AROUND THE HOUSE FOR A FEW WEEKS. I WILL BE SOULLY DEPENDENT ON THEM. I WAN'T TO MAKE THINGS AS EASY AS POSSIBLE FOR EVERYONE. IF YOU OR ANYONE HAS ANY GOOD TIPS OR IDEAS FOR RECIPES THAT CAN BE FROZEN AND COOKED LATER I WOULD REALLY APPRECIATE IT.
