Au Gratin Roquefort Potatoes

- About 15 potatoes, peeled and thinly sliced shopping list
- 3/4 cup unsalted butter, cut into small pieces shopping list
- salt and freshly ground black pepper to taste shopping list
- 3 cups heavy cream shopping list
- 4 ounces Roquefort cheese, crumbled shopping list
- 1/2 cup seasoned bread crumbs (I like to make my own) shopping list
- 3 tablespoons butter for bread crumbs shopping list
How to make it
- Grease a large roasting pan with butter
- Arrange the potatoes in rows, layering
- Sprinkle with salt and pepper
- Dot with butter over entire surface
- Meanwhile, in pan on stove, bring the cream just to a boil
- Stir in the cheese, cook over high heat, constantly stirring until cheese melts
- Season with a little salt and pepper
- Pour the cream mixture over the potatoes
- Cover the potatoes tightly with aluminum foil
- Bake for 1 hour and 30 minutes
- Meanwhile in bowl, place seasoned bread crumbs with 3 tablespoons melted butter, toss to coat and have ready
- Remove potatoes from oven, removing foil *carefully*
- Sprinkle buttered breadcrumbs over entire surface of the potatoes
- Set the pan under broiler until the top is golden brown
- Let stand for about 10 minutes
- Can cut into even sized squares when ready to serve
