These lamb chops have a very intense coffee flavor but they are so good to my whole family loves this dish. I have it with Peach chutney, Sautéed greens, coconut corn muffing and pina colada granita recipes to follow later.

Ingredients
  • For the Glaze.
  • 1/4 cup strong brewed coffee
  • 2 Tbsp. molasses
  • 2 Tbsp. apple cider vinegar
  • 1 Tbsp. white or dark rum
  • 1 tsp. garlic minced
  • 1 tsp. instant espresso
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1/4 tsp. red pepper flakes
  • For the Lamb chops:
  • 8 lamb rib or loin chops trimmed, seasoned with salt and pepper

Directions
  1. Boil glaze in a small skillet, reducing until syrupy, 1 to 2 minutes.
  2. Preheat the grill pan over high, when hot, reduce the heat to medium and coat with nonstick cooking spray.
  3. Brush lamb chops with glaze on one side, and then grill in batches or 4 chops, glazed side down, 4 to 5 minutes per side for medium. glaze again, flip and grill the other side.
  4. Let chops rest for 5 minutes before serving.
