My Big Fat Greek Pizza

- 1 large boboli pizza crust (or you make one if you feel adventurous!) shopping list
- pizza sauce shopping list
- 1 28oz can of diced tomatoes shopping list
- 1 small can of tomato paste shopping list
- 3 tablespoons of olive oil shopping list
- 1 small diced vidalia onion shopping list
- 1 teaspoon of crushed hot peppers shopping list
- 1 cup of chopped tri-color peppers ( frozen is fine) shopping list
- 2 teaspoons of balsamic vinegar shopping list
- 2 teaspoons dried oregano shopping list
- 2 heaping tablespoons of minced garlic shopping list
- PIZZA TOPPINGS shopping list
- 1 small eggplant sliced thin shopping list
- 1 small vidalia onion sliced thin shopping list
- 2 roma tomatoes sliced thin shopping list
- 4oz mozzarella cheese shredded shopping list
- Small container of feta cheese crumbled shopping list
- 1 cup small spinach leaves shopping list
- 1 pound of Loukanika or hot italian sausage shopping list
- Small can of sliced black olives shopping list
How to make it
- Preheat oven for 400 degrees
- Grease a cookie sheet with non-stick cooking spray.
- Arrange sliced eggplant, sliced onions and sliced tomatoes on cookie sheet and season with salt and pepper.
- Place in oven for 15 minutes to roast these veggies and dry tem out a little.
- Remove and place veggies on a separate plate.
- In a large skillet, brown the Loukanika as links or the italian sausage crumble up. Set aside when done.
- **** MAKING THE SAUCE ****
- In a large skillet heat 3 tablespoons of olive oil and add garlic, peppers and diced onions.
- Saute for several minutes until they start to get tender.
- Add 28oz can of diced tomatoes, basalmic vinegar, oregano and crushed hot peppers and bring to a steady simmer. Continue to stir so non of it burns.
- Add tomato paste and continue to simmer for about 20 minutes to let flavors get stronger and and the sauce to thicken. Then remove from heat and let cool down.
- **** ASSEMBLE PIZZA ****
- Place pizza crust on cookie sheet.
- Spead a good coat of sauce on Boboli pizza crust. You will have lots left over but save it for another recipe ( or just eat it by the spoon full! Its so good! )
- Coat the sauce with a healthy layer of mozzarella cheese.
- Arrange roasted eggplant and roma tomatoes on pizza.
- Place roasted onion rings on pizza.
- Scatter spinach leaves on pizza.
- Spread sliced Loukanika or crumble italian sausage on pizza.
- Top with crumbled feta and sliced olives.
- Top with a thin layer of more mozzarella cheese.
- Place pizza on cookie sheet in the oven and let cook for 15 – 20 minutes.
- Remove and let cool for a few minutes. Slice into 8 pieces and serve.
