Hearty Spinach Mushroom Soup

- 2 tsp margarine or butter shopping list
- 1 (8 oz) pkg sliced fresh mushrooms (3 cups) shopping list
- ½ C finely chopped carrot shopping list
- ½ C finely chopped onion shopping list
- 1 (14 ½ oz) can chicken broth shopping list
- 1 ½ C spinach leaves, veins removed shopping list
- 1/8 t nutmeg shopping list
- dash pepper shopping list
- 2 C skim milk shopping list
- ¼ C flour shopping list
- 4 oz. cream cheese shopping list
- 4 oz. (1 Cup) shredded swiss cheese shopping list
How to make it
- Melt margarine in large pan over medium heat
- Add vegetables; cook & stir about 3 minutes
- Add broth, spinach, nutmeg and pepper, mix well
- In a small bowl, whisk milk and flour until well blended
- Add to spinach mixture; cook, stirring constantly, until thick and bubbly
- Add cheeses; cook and stir until melted
- Serve
- Serving size: 1 1/4 C 250 calories
