Hearty Spinach Mushroom Soup Recipe

Ingredients
  • 2 tsp margarine or butter
  • 1 (8 oz) pkg sliced fresh mushrooms (3 cups)
  • ½ C finely chopped carrot
  • ½ C finely chopped onion
  • 1 (14 ½ oz) can chicken broth
  • 1 ½ C spinach leaves, veins removed
  • 1/8 t nutmeg
  • dash pepper
  • 2 C skim milk
  • ¼ C flour
  • 4 oz. cream cheese
  • 4 oz. (1 Cup) shredded Swiss cheese

Directions
  1. Melt margarine in large pan over medium heat
  2. Add vegetables; cook & stir about 3 minutes
  3. Add broth, spinach, nutmeg and pepper, mix well
  4. In a small bowl, whisk milk and flour until well blended
  5. Add to spinach mixture; cook, stirring constantly, until thick and bubbly
  6. Add cheeses; cook and stir until melted
  7. Serve
  8. Serving size: 1 1/4 C 250 calories

I just made a version of this that calls for garlic instead of mushrooms. I'll have to try this one!
