Banana Pudding Ice Cream Sandwiches

  • 48 square butter cookies (Pepperidge Farm Chessman cookies)
  • 3 bananas, sliced
  • 1 cup whole milk
  • 1 3 oz. box vanilla instant pudding
  • 1 4 oz. pkg. cream cheese, softened
  • 1/2 can sweetened condensed milk (7 oz)
  • 1/2 container of whipped topping (4 oz)

Directions
  1. In a large bowl, combine the milk and the pudding mix; blend well with a hand held mixer.
  2. Using another bowl, combine the cream cheese and condensed milk together; mix well until blended and smooth.
  3. Fold the whipped topping into the cream cheese mixture.
  4. Add the cream cheese mixture to the pudding mixture and stir until well blended.
  5. Refrigerate for at least one hour to firm it up. Lay banana slices on one cookie.
  6. Put a tablespoon of the firm pudding mixture on the banana slices.
  7. Put another cookie on top. Store them in an airtight container and freeze one hour.

Oh this looks so interesting. I don't like frozen bananas but I do like banana pudding and this is an interesting variation.


Can't wait to try this one. Think my kids will love this...& me too!!!
