Spinach Pear And Shaved Parmesan Salad Recipe

Ingredients
  • 8 cups lightly packed baby spinah leaves, stemmed, rinsed and dried (you can use canned pears)
  • 2 Bosc pears (do not peel) quartered, cored and cut into long this slices
  • 1/2 cup (2oz.) coarsley grated Parmigiano- Reggiano
  • Dressing:
  • 1/2 cup extra virgin olive oil
  • 2 Tbs. balsamic vinegar
  • 2 tsp. whole-grain mustard
  • 1tsp. sugar
  • 1 tsp. salt
  • freshly ground pepper

Directions
  1. Place the spinach and pears in a large serving bowl. Scatter the cheese on top.
  2. To make the dressing
  3. In a small jar with a tight lid, combine the olive oil, vinegar, mustard, sugar, salt, and pepper to tast.
  4. Taste and adjust the seasonings.
  5. Pour the dressing over the salad and toss gently.
  6. Serve immediately

WoW! I absolutely *love* balsamic vinegar and I am always surprised at the difference in flavors between all of them! The color contrast between the baby spinach and pears sounds beautiful. . .thank you for sharing this recipe that I will be using for entertaining! =D
