How to make it

  • Preheat oven to 350 degrees. Place the tomatoes in a colander in the sink in a single layer. Sprinkle with salt and allow them to drain for 10 minutes.
  • Pat the tomatoes dry with paper towels. Layer the tomato slices, basil and onions in the pie shell. Season with salt and black pepper to taste. Combine the grated cheeses and mayonnaise. Spread the mixture on top of the tomatoes and bake until the cheese is melted and the top is lightley browned, about 30 minutes. Cut into slices and serve warm.
