Ranch Chicken Pasta Recipe
This is a summer favorite at our house. Guess I’m getting spring fever. Had a couple nice days and started thinking picnics, BBQ, etc…

Ingredients
  • 1 lb bowtie pasta
  • 1 lb boneless chicken breast
  • Salt and fresh ground pepper
  • 2 T. olive oil
  • 3 cloves garlic, minced
  • 1 lb frozen broccoli florets
  • 3 firm plum tomatoes, chopped
  • 1 pkg ranch dressing mix
  • 1 tsp fresh ground pepper
  • 1 C. sour cream
  • ½ C. mayo
  • Milk

Directions
  1. Mix ranch mix with pepper, ½ of the garlic, sour cream and mayo, thin with milk if needed. Refrigerate until needed.
  2. Cook pasta according to package directions. Just before draining add the frozen broccoli
  3. to the pot. Drain and rinse with cold water. Place in large bowl. Add tomato
  4. Salt and pepper chicken. Cut in bite size chunks.
  5. Heat oil and remaining garlic in skillet. Add chicken and cook till done. Remove and let cool. Add to bowl with pasta.
  6. Stir in dressing, chill until needed.

I like the way you treat the broccoli, this method keeps it nice and bright green and a little crunchy.

I will use fresh broccoli from the garden.
