Chicken Tacos

- chicken - I prefer boneless breasts shopping list
- 1 t cumin shopping list
- 3 T chili powder shopping list
- 2 garlic cloves - can use 1 t garlic powder shopping list
- 1 medium white onion - chopped shopping list
- 3 tablespoons cooking oil shopping list
- 2 large tomatoes chopped - can use 1 can choped tomatoes shopping list
- 1 cup chicken broth shopping list
- salt to taste shopping list
- 12 hard taco shells, or (12 Soft tortillas) shopping list
- Garnish - chopped tomatoes, shredded lettuce, cheese, sour cream, guacamole.... shopping list
How to make it
- In four quart pan add chicken breasts. Salt, cover with water, bring to boil, loosely cover. Cook over medium low heat for 1 hour, drain, saving broth. Set chicken aside to cool.
- When cooled cut or shred into small strips. In same pot add oil and saute the onions till lightly goldenightly sautéed. Add chicken and continue cooking 3 or 4 more minutes.
- In blender combine tomatoes, chili powder, garlic, cumin and oregano, mix well. Pour mixture in pan along with 1cup of chicken broth. Bring to boil, cover and simmer over medium heat about 15 or 20 minutes till it reduces by half, salt to taste.
- Heat oil in skillet. Cook corn tortillas, one at a time, in hot oil until soft, about 10 to 15 seconds; drain. Spoon 2 Tablespoons of chicken taco meat in center of each tortilla, spoon some tomato sauce mix on top of that and top with tomato, lettuce, cheese, sour cream and guacamole.
