I have not yet made this. I actually just saw it in a recipe newsletter that I receive, but it looked so good that I wanted to share it.

Ingredients
  • 2 lbs. pasta
  • 4 large lemons
  • 1/2 c. Vodka
  • 2 c. heavy cream
  • 1 t. pepper
  • 1/2 c. chopped parsley
  • 1 & 1/2 c. Parmesan Cheese

Directions
  1. In large pot bring water to boil with 1/2 c. salt and cook pasta for 8-10 minutes.
  2. Grate rind of one lemon and reserve. Squeeze the juice of all lemons and reserve.
  3. In medium saucepan heat vodka and heavy cream until it thickens. Add the lemon rind and juice to the cream mixture. Stir well.
  4. Add in the pepper, parsley and parmesan. Heat for 1 minute and remove from heat.
  5. Drain pasta and place in large pasta bowl. Pour the creamed mixture over it and toss well.
  6. Serve with extra parmesan.

It might sound odd for me to say about a LEMON pasta sauce, but I found this recipe too lemony. Many other recipes I checked had similar proportions of lemon to cream, so I guess this is how they are supposed to taste, but it seemed like I could have left out the vodka, parsley and parmesan and it would have tasted the same: like lemon juice! I do love lemon (I like my lemon pie very sour), but if I were to make this again, I would try it with less lemon and see how it turns out.

I would suggest pasta type.. linguine or fettuccini.. adding shrimp over the top wolud be good.. I love lemony anything..
