How to make it

  • Line Cookie sheet with Aluminum foil.
  • Sprinkle 1 C. coconut over foil, and bake 5-7 minutes, until golden brown.
  • Mix toasted coconut, remaining coconut, flour and salt.
  • Beat milk, cream of coconut, vanilla, almond, and egg in Medium bowl. Stir milk mixture in with coconut mixture until well blended.
  • Drop by rounded teaspoonfuls onto sheet. Bake 12-14 minutes, until light brown.
  • Heat chocolate chips and 1 T. oil over low heat. Drizzle over cookies.
