I love baking scones and serving them with home made jam and a good cream is best. This is one of my favorites.

Ingredients
- 4 ounces mascarpone
- 1 cup heavy whipping cream
- 1 teaspoon pure vanilla extract
- 1 or 2 tablespoons granulated white sugar ( I use splenda)
Directions
- Place all the ingredients in a large bowl and beat until the mixture holds its shape and looks like softly whipped cream. Use right away or cover and refrigerate the cream until serving time.

Oh Sunny this sounds so good! I love scones too and can't wait to try this. Oh wanted to tell you I was at the best kitchen store this weekend and I found all sorts of cool stuff for scones!! My favorite was a scone pan..it has the shapes of the scones indented in the pan, so all you have to do is pour your scone dough in them and bake!
